3 healthy vegan recipes for when you’re feeling lazy asf.
All of these recipes are so quick to make, with minimal prep time. They are all under 15 minutes, except for the last one, the cooking time is longer, but it’s probably the easiest to make and has the least amount of prep time. Full recipes below.

Rice noodle salad with satay peanut sauce
Rice vermicelli noodles (how ever much you would like)
1/2 Head Broccoli
1 block firm tofu
For the sauce
1/3 cup crunchy peanut butter (100% natural)
2 Tbs sweet chilli sauce
1/4 cup water
1. Make the noodles by boiling a kettle and pouring the water over the noodles, let sit for a min while stirring. rinse under cold water and set aside.
2. Chop tofu into cubes, fry in sesame oil, add soy sauce as they start to brown, set aside for a further minute
3. Blanch broccoli for 30 seconds, rinse under cold water, set aside.
4. For the sauce, add peanut butter, sweet chilli and water to saucepan, mix until combined.
5. place everything in a bowl, add the sauce and enjoy!
Recipe 2: Pesto pasta
– 500g Pasta of choice (I used wholewheat)

1. cook pasta according to packet instructions
2. while the pasta is cooking, make pesto by combining all ingredients into food processor and blending until smooth.
3. pour on top of pasta and serve
Recipe 3: Mexican stuffed sweet potato
– Sweet potato
– Black beans (tinned)
– red onion
– lime juice
1. place sweet potato on a tray lines with baking paper, poke holes in it. place it in oven at 200ºC for an hour or so.
2. while cooking, prepare the toppings- drain and rinse beans, chop tomato and red onion, smash avocado with some lime.
3. cut sweet potato down the middles, add toppings and serve
